a React context, so a COMPONENT call site under a custom ReferenceModeProvider must thread its
store through here (useReferenceModeStore()). Default: the app-wide default store — zero-config
behavior unchanged.
Build the production SheetEditable for a sheet — the DefaultEditable wired with a workbook-aware active-cell anchor (createEditableAnchor) and SDK edit strategy (createSheetCreateEdit), self-published to the edit-mode bus (publishEditableToBus) and the reference-mode bus (wireReferenceMode). The one place that composition lives, so call sites (the grid and the app's auto-editable) don't repeat it.
Remarks
A factory, not a subclass: the editable's only varying behavior is how an edit is created, which is already the injected
CreateEditstrategy — there is nothing for a subclass to override. Returns the IEditable interface so callers and props stay implementation-agnostic.
